Here's what's on our menu for the week. Our family is composed of 4 male meat-eaters on the weekends (3 almost adults and Dh) and our 3.5yo and me.

Sunday:

Monday:
Big Salad

That one's easy-peasy. I chopped some of our new little lettuce greens from outside, boiled a few eggs that I quartered and sat on teh side of the plate along with some cheese. Hmm. I think I also used some artichokes, cucumber, and carrot sticks. Oh, and some chickpeas. It was good.

Tuesday:
Chille Rellenos Casserole and Broa (Portuguese Corn Bread - I bought the Artisan Bread in 5 Minutes a Day book. It's an easy recipe contained there.)

Here's what I actually did - using the comments provided by other users.

INGREDIENTS
  • 3 Poblano Peppers
  • 8 ounces Smoked Gruyierre cheese, shredded
  • 3 eggs, beaten
  • 1/2 cup whole milk
  • 2 tablespoons all-purpose flour
  • 1 (10 ounce) can enchiladas sauce
DIRECTIONS
  1. Roast and peel the poblanos. Chop into one inch pieces.
  2. Preheat oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking dish with cooking spray.
  3. Lay half of the chilies evenly in bottom of baking dish. Sprinkle with half of the cheeses, and cover with remaining chilies. In a bowl, mix together the eggs, milk, and flour, and pour over the top of the chilies.
  4. Bake in the preheated oven for 25 minutes. Remove from oven, pour enchiladas sauce evenly over the top, and continue baking another 15 minutes. Sprinkle with cheeses, and serve.

Wednesday:
Pasta Salad & another loaf of the Broa

Tomorrow will be busy. I'll probably make the pasta salad early so we can eat on it as we're coming and going. It'll just be a combination of various chopped raw veggies like broccoli & carrots. I'll add the last of the artichokes and some olives. Then I'll toss it all in some Italian dressing and sprinkle with some parmesan before serving. I may have more veggies on hand I'm not remembering right now.

Thursday and Friday didn't get filled in on our menu this week. I'm usually better about it. Probably veggie burgers with leftovers on Thursday.
