Since we're thick in the csa season, I'm kind of coming up with things on the fly to keep on top of our produce.

I was thinking about this for tonight. I don't have the all-purpose baking mix, but I do have a box of pancake/waffle mix that's been in my cabinet for an eon. I'm thinking about subbing that and crossing my fingers. Good idea?

Mimi's Zucchini Pie

  • 4 eggs
  • 1/4 cup vegetable oil
  • salt and pepper to taste
  • 1 teaspoon baking powder
  • 1 cup all-purpose baking mix
  • 1 1/2 cups sliced zucchini
  • 1 1/2 cups sliced yellow squash
  • 1/4 cup chopped onion
  • 1 large ripe tomato, sliced
  • 1/4 cup grated Parmesan cheese

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch deep dish pie plate.
  2. Whisk together eggs and oil in a bowl with salt and pepper. Stir in baking powder and baking mix until moistened. Gently fold in zucchini, summer squash, and onion. Pour into prepared pie plate, and arrange sliced tomato over top. Sprinkle with Parmesan cheese to taste.
  3. Bake in preheated oven until puffed and golden brown, about 35 minutes.

I'd go for it. I saw a similar recipe in the CJ the other day (in the feature article on that 100 mile potluck), but I think it was a bit more quiche-like. It sounds good though. Tonight we're doing a tortellini with pesto and veggies. I don't have a CSA, but we do have an overgrown basil plant, so pesto it is. I think tomorrow we're going to have the 365crockpot lady's chicken adobo.

I only ended up having about a 1/2 cup of the mix, so I just threw it in and went with that. It turned out pretty darned good. I'll definitely make it again.

I really liked that I didn't have to sautee the veggies first and then add them to the egg mixture. That extra step (and dirty pan) is nice to skip.

We've been getting lots of basil in our csa and we have an overgrown basil plant. And? I have cheese tortellini in the fridge. I haven't decided whether to make a tomato sauce to go with that or to make pesto. Pesto's awfully good on pizza, too.

Mmm, pesto pizza sounds good, maybe we'll do that next week. Glad the zucchini pie turned out well, I might give that a shot next week also.
We should do a new "what's for dinner" thread each week. I know I'm always looking for different meal ideas.

For today the chicken adobo is happily in the crock, just have to make some rice later to go with it. Oddly enough, DH had pork adobo for lunch yesterday at a Filipino restaurant, so he's not so enthused about said dinner. Oh well.

Three posts? What 3 posts? ;) I got it.

I love the idea of a weekly food thread. I love to read about food and talk about food. The real reason I had cable canceled is because I'd sit around all day and watch the food network. (I know. I'm a dork.)

I think my son would love the chicken adobo thing. He had it once at Sari Sari a few years ago and still talks about it.
