We went strawberry picking at Huber's today.

A friend suggested this recipe so I made it tonight. I cut the sugar down to 3/4 cup, but it was still plenty sweet. It was simple to make and Oh so delicious. I wish I'd made two.

Strawberry Glace Pie

6 cups strawberries
1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
1 (3-ounce) package cream cheese, softened
1 (9-inch) baked pie shell
  1. Mash enough strawberries to make 1 cup, set remaining strawberries aside.
  2. In a saucepan, combine sugar, cornstarch, water,  and the reserved mashed strawberries. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Cook for 1 minute. Cool slightly.
  3. Beat softened cream cheese until smooth. Spread into baked pie shell. Fill the shell with the remaining strawberries. Pour the cooked strawberry mixture on top. Refrigerate for 3 hours, or until set.
Makes 8 servings.

It is SO good, but I'm wiped. out. from today.

We used the little strawberry huller thingies we bought at Huber's to hull enough strawberries for shortcake for tonight, but that's about all I had the energy for tonight. I'll try to make it for tomorrow. I'll post a picture if I can take one before it gets inhaled. When I finally sat down to eat my shortcake tonight, my son said, "Do we get seconds?" He'd already eaten his before I even made it to the table, lol.
